Sausage Cornbread Stuffing

- 1 package stove top cornbread stuffing mix (plus ingredients to make the cornbread: 4 tablespoons butter and 1.5 cups chicken broth or water)
- 1 tablespoon olive oil
- 1 package Jimmy Dean Premium Pork Roll Sausage, cut into 1-inch pieces
- 1 red bell pepper, chopped
- 3 stalks celery, chopped
- 1/2 yellow onion, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon pepper

Sausage Cornbread Stuffing Recipe
Instructions

Preheat oven to 350 degrees.

Cook cornbread stuffing according to package instructions.

Pour cooked cornbread into a 9x13 inch casserole dish.

Meanwhile, in a medium saucepan, saute the sausage, pepper, celery, and onion with 1 tablespoon of olive oil, salt and pepper. Saute for 5 minutes.

Pour over the cornbread stuffing and stir to combine.

Bake for 45 minutes. Enjoy!

Stuffing picks up flavor from the meat, but it takes a lot less time and effort to just bake the dressing in the pan alongside. When topped with gravy, you get the meat flavor to satisfaction.

This looks like a rich and delicious recipe for a festive meal. I have never tried peppers as an ingredient for stuffing but I'm sure it will create a stronger more intense taste.
