- 2 tablespoons Extra Virgin Olive Oil
- 1 Large Yellow Onion
- 4 cloves Garlic
- 1/2 Large Head of Cabbage
- 6 cups Low Sodium Vegetable Stock
- 2 Ribs Celery
- 28 ounces Diced Tomato
- 1 Large Carrot
- 1 cup Fresh Green Beans
- 2 teaspoons Salt
- 1 teaspoon Dried Thyme
- 1/2 teaspoon Ground pepper
- Fresh Parsley
Heat olive oil in a soup pot over medium heat, then add in chopped onion and garlic.
Add cabbage, celery, diced tomato, carrot, green beans, salt, dried thyme, dried parsley, and ground pepper.
