Spicy Smothered Bacon Cabbage

- 1 head of cabbage, shredded
- 1 pack of bacon, sliced
- 1/2 cup chicken broth
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1/2 tablespoon black pepper
- 1 red bell pepper, diced
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon apple cider vinegar

In a large skillet, add bacon and cook until just beginning to get crispy. Add bell pepper, onion, and spices and mix well. Cook for about 5 minutes, until the veggies are tender.
Add cabbage and broth. Cook about 20 minutes, cabbage will wilt and become translucent. Add apple cider vinegar and cook 5 minutes more.

After 5 years at boarding school my cabbage rule is that it should NEVER be wilted. Cabbage changes flavor from delicious (when crispy) to totally drab (when "wilted"). Sorry but that's just me. Aside from making sure the cabbage was still CRISPY when served, I made no other changes. There's really nice flavor in this recipe and we will be making it again, often.

I do love cabbage. I think it's going to be extra nice with crispy bacon. The apple cider vinegar sounds like something I would like as well. It does look like an interesting and easy meal to prepare. I like fennel and I wonder what this recipe would be like with fennel.

This was a really nice side dish to our barbecue last weekend! I did make a few changes - fresh onion and garlic in preference to the powder and spicy chorizo sausage in place of the bacon because we did not have any. Also I prefer crunchy cauliflower so I used a little less stock and cooked it for just about 10 minutes.

Most of the ingredients are pretty straightforward in this dish, and it looks quite flavorful and delicious. However, I am a bit confused about the bacon. Where I shop, bacon comes mostly in one pound packages, or 12 ounces if you buy the center cut. If this is the case (the recipe just says 1 pack bacon) there would be an awful lot of grease. I would probably use less bacon, like 8 - 10 strips or so, and drain most (reserving 2 tbsp.) of the grease before adding the cabbage.

I love cabbage in any way shape or form, and this Spicy Smothered Bacon Cabbage truly satisfies the cabbage lover in me. The flavorful blend of ingredients come together so wonderfully. I ad red pepper flakes for a little extra zing. I often times serve this a s a side dish, but honestly, I enjoy a nice big bowl of it for lunch, and I've even considered serving it over rice as a main dish.

This may sound a little strange but some sliced carrots or however you prefer them to be cut and diced tomatoes would really enhance this dish to another level. I've never had bacon with cabbage before so I'm kinda curious on what that would be like and I agree the red pepper flakes would probably bring just the perfect amount of heat to bring it all together.

It is true that steamed cabbage can be a very bland dish and this recipe will most definitely take it to the next level and then some. I usually make cabbage once a month as my husband is not a big fan. This recipe for cabbage just may win him over.

Ok, so I am looking for a new cabbage recipe and this is the second one that the recipe calls for a pound of bacon. Are these dishes designed to be the main course or a side?

This is a great combination of flavors to spice up what is otherwise a fairly bland dish. I like adding bacon to cabbage, and the addition of the pepper and onion really kicks it up, along with the garlic. I'd be tempted to swap beef broth for the chicken broth to see how that makes it taste. It's a great recipe and one I'd like to try soon.
