Egg Salad


  • 2 eggs, hardboiled for 10-12 minutes
  • 1 to 1-1/2 teaspoons mayonnaise
  • 1/4 tsp dry mustard
  • 1 scallion, minced
  • salt
  • pepper


Mix 'em up! Slap it between 2 slices of wheat bread and eat it up fast, before your roommate gets interested. Another variation for people who like marinated foods is to leave out the dry mustard and add chopped dill pickles and a little pickle juice. Leave the salad in your fridge overnight to develop FLAVOR (only works if you don't have a roommate, spouse, or significant other).
