Cool and Refreshing Cucumber Sandwiches

Beat the heat with Cool and Refreshing Cucumber Sandwiches. Wildly popular among picnic recipes, this will quickly become one of your go-to fresh summer recipes.


  • 3 cucumbers, peeled and thinly sliced
  • 8 ounces cream cheese, softened
  • 1 package powdered Ranch Dressing
  • 1/2 cup mayonnaise
  • 1 tablespoon Miracle Whip
  • 1 loaf of cocktail rye bread
  • dill weed, to taste


  1. Mix the cream cheese, dressing mix, mayo and salad dressing together in a medium sized bowl.
  2. Remove crusts from rye bread.
  3. Spread cream cheese mixture onto the bread.
  4. Place a thin layer of cucumber slices on the bread.
  5. Sprinkle with a little dill weed and place another slice of bread on top.
  6. Cut sandwiches down to desired size and serve.

I came across this recipe by chance. It brought back some memories as I don't think cucumber sandwiches are that popular these days, which is a pity as they are delicious. I'm going to be making them soon. The cream cheese mixture looks tasty. I think this is a good lunch box idea. It is nice to find a healthy sandwich which doesn't contain cheese or bacon.
