Homemade Pico de Gallo Recipe

- 1 tomato, diced
- 1 Poblano pepper, diced
- 1 Anaheim pepper, diced
- cilantro, chopped (as much or as little as you like)
- 1 red onion, diced
- 1 green onion, diced
- 1/2 clove garlic, diced
- 1 jalapeno, diced
- salt, enough to taste
- the juice from 1 lime
In a large bowl, combine all ingredients and mix well.
Refrigerate until ready to serve or serve immediately.
Serve with tortilla chips.

Oh my goodness, this Pico de Gallo sounds and looks so amazing! It never occurred to me to use Poblano or Anaheim peppers though...I usually use green bell peppers as well as jalapeno but I think I'm gonna have to give this a try. I can't do lime juice it really doesn't agree with me but lemon juice is wonderful in Pico de Gallo!

Pico de Gallo is such a good relish to put on just about anything. Except, perhaps, ice cream, lol! I just love the whole combination of flavours the tomato, onion, chili, peppers, garlic, the cilantro, the lime or lemon juice. Just perfect and in summer we sometimes even add some olive oil and use it as a cold pasta sauce. Delicious!

I like to make pico de gallo with the little sweet grape tomatoes that I grow in my vegetable garden. It is kind of tedious to chop up the little guys, but they are so sweet and have very few seeds. I would toss in whatever hot peppers are ready to be picked. This stuff makes a great condiment in tacos, scrambled eggs, or even on top of some grilled fish! I could eat it right out of the bowl!

I like this idea of making a salsa without so much tomato as I find tomato to be quite watery. I believe in leaving the seeds in the tomato as that is where the flavor is. By making this salsa with more peppers I am sure it will be very tasty. I do believe that it is a perfect additive to guacamole due to the fact that it is less saucy and has less tomato in it but it still has all the good flavor!
