Copycat Panera French Onion Soup
French onion soup is a classic soup recipe. Many people are intimated to make it at home, but it's easier to make than you think. Try this version of Copycat Panera French Onion Soup. After cooking the onions, add the rest of the ingredients and let simmer. It will take over an hour to make from start to finish, but the process is easy and the result is delicious. After all, it's topped with French bread and cheese. Eat it on its own or as a first course in a larger meal.
- 2 large sweet onions, sliced into thin strips
- 2-3 tablespoons olive oil
- 1/2 teaspoon diced garlic
- 2 cups dry white wine
- 4 cups beef broth
- 4 cups chicken broth
- 1/2 teaspoon dry ground thyme
- Salt and pepper, to taste
- Toasted French bread rounds
- 1-2 cups mozzarella and provolone cheese
Saute onion over medium low heat, stirring frequently. Onions should slowly cook for 30 to 40 minutes, slowly caramelizing.
Add the garlic and saute for 30 seconds. Add the wine, broths, thyme, and salt and pepper. Simmer over low heat for 20 minutes.
Place in bowls, top with toasted French bread rounds and copious amounts of cheeses. Broil briefly until cheeses melt, and serve hot.

Oh...my...goshI just love a hearty bowl of french onion soup! i have made many batches over the years and have learned a few tricks. If you are going to give this a whirl, the best lesson that I ever learned was to cook the onions LOW and SLOW! THat is how you can build up that really good carmelization which will be your awesome flavour in the end. Something else that a friend told me to do is to put in a bit of vinegar into the broth if it isn't quite flavourful enough (cider vinegar, white balsamic vinegar, rice vinegar have all worked for me.) Make sure you have lots of yummy bread for dipping! So good!

My family really enjoys eating soup so this would definitely be popular with them. French onion soup is one of my favorites so I'm glad I located this recipe. However, to make this soup healthier, I would use reduced sodium beef and chicken broths. This will make a great dinner on a cold winter's night.

I have never been to Panera so I can't say if this tastes exactly like it or not. I don't know why, but i always though French onion soup was made with Swiss cheese. How many does this serve? This would be great to serve to guests. Simple and yet seems fancy.

I love Panera's french onion soup, and this tastes just like it. I used an inexpensive Pinot Grigio drinking wine, because cooking wines seem to have salt and other stuff in them. If the wine doesn't taste good in a glass, it's not worthy of the cooking pot! I made some bakery french bread to make croutons--crunchy outside and chewy inside.
