Ranger Oatmeal Cookies

  • 1/2 cup peanut butter
  • 1/2 cup margarine, softened
  • 2 cups brown sugar, packed
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 3/4 cup flour
  • 2 teaspoons baking soda
  • 3/4 teaspoon salt
  • 1/2 cup pecans, chopped
  • 1 cup flaked coconut
  • 1 1/2 cup Quaker Oats
  • 1 cup chocolate morsels


  1. Cream peanut butter and margarine in a large mixing bowl. Add brown sugar gradually, mixing well. Beat in vanilla and eggs.
  2. In a seperate bowl, mix together flour, soda and salt, and then add to creamed peanut butter mixture.
  3. Add oats, pecans, coconut, and chocolate morsels, and mix thoroughly.
  4. Drop by heaping spoonfuls on a greased cookie sheet. Bake at 350 degrees F for 11-12 minutes.

2 eggs should be added to the ingredients list

I have the same question as Nana to 3 -- how many eggs? None are listed in this recipe.

How many eggs? It says in instructions to beat in eggs but there are no eggs in the ingredient list.
