Bavaroise Frutillas ( Strawberry Snow) Chile


  • 2 envelopes unflavored gelatin
  • 1/3 cup cold water
  • 1/3 cup boiling water
  • 2 cups strawberry or raspberries, crushed, or 2 packages (10oz each) frozen
  • berries (reserve several for garnish)
  • 3/4 cup sugar
  • 2 tablespoons water
  • 4 egg white, beaten until stiff but not dry


serves 8. Soak gelatin in 1/3 cup cold water, then dissolve in boiling water. Add crushed strawberries. Chill until mixture begins to jell. Cook sugar and 2 tablespoons water in a small heavy saucepan until a few drops form a soft ball in cold water. Remove from heat and gradually add to egg whites, beating constantly. Continue beating gently until cool. Combine egg white mixture and strawberry mixture and turn into a 1 1/2 quart mold. Chill until set. To serve, unmold on a platter and surround with a garnish of strawberries.
