These delicious meatballs are insanely easy to make and even more insanely delicious. You can whip these up to throw on top of some spaghetti and have a classic spaghetti and homemade meatball recipe, or you can throw some marinara, bbq, or teriyaki sauce on these meatballs to make them a delicious appetizer or side dish!

- 1 pound ground beef
- 1 cup dry Italian breadcrumbs
- 1 small onion, diced
- 1 cup Parmesan cheese
- 1 clove garlic, minced
- 1/4 cup chives
- 1 teaspoon salt
- 1 teaspoon pepper

To prepare the meatballs, crumble the beef and gently combine breadcrumbs, parmesan, garlic, onion, chives, salt, and pepper.
Use an ice cream scooper to form 2 inch meatballs and place on a foil lined baking sheet. Tip: Dip scooper into a cup of clean water in between use.
Bake 400 F for 15 minutes.

You can honestly never go wrong with meatballs. I like eating meatballs as an appetizer, so I think these meatballs will definitely be great before dinner today!

Just the other day I was thinking about making some meatballs. It is rare that I have a craving for a food and this recipe fits the bill for what I was thinking about. I know in the past when I prepare meatballs, they would tend to be a little on the dry side. I am hoping these will not be.

I will be the first to admit, ground beef has the ability to become the center attraction or a side dish, just depending on how you make it. You can not go wrong with meatballs but make sure you do not overcook them and then they will be dry and tasteless.

There are so many things you can do with meatballs and I love that you can basically infuse just about any flavor you like into them. Chives is a nice touch and Parmesan and meatballs go hand in hand regardless of what you decide to do with them in my book. You can also make tons of them in various sizes and freeze to use at a later time. Mmmmm...a meatball sub sounds yummy right about now!

I have been wanting a good meatball recipe for ages and this is definitely a good one. Have never included parmesan before and, boy, does it make for great flavor! This Grandma was, quite obviously, a great cook and I am so happy that I found this recipe. Thank you!

Grandma's Favorite Meatballs recipe proves that Grandma had it going on. This recipe is a classic in Italian households. Anyway you choose to serve them, you really can't go wrong. I like serving them an crispy Italian bread, with marinara sauce and melted mozzarella cheese for the perfect meatball parm hero sandwich.

This is fairly similar to how my mother made meatballs, though the inclusion of the Parmesan cheese in the meatball is new to me. She had a different recipe for making teriyaki meatballs and I need to dig that up sometime. If I were to use these in a sandwich, I might add a bit of shredded cheddar to the mix.

This is a quick and simple meatball recipe that is great for a ton of things. I might even make a quick beef / mushroom gravy to coat these guys in, and serve them over buttered homestyle noodles, spaetzle, or rice! I will dice the onions a little more finely so that they don't fall out as easily during the "balling" process, but I love the fresh flavor of the chives!
