This sounds delicious! I had not encountered rouladen before coming across this recipe and I really want to try this out. The writer makes mention of other rouladen recipes that use mustard and/or horseradish. Being a fan of both, I might try making it up with a good horseradish mustard and see how it tastes. The nice thing is that since they're made separately, you can easily vary the ingredients from one to another. I like spaetzle so I'll use those as a change from egg noodles.

I have been looking everywhere for this recipe. My German friend use to make this for me when I was in Germany. All I could remember was the rollup and haven't been able to find the recipe. Thank you so much for having it posted here because I loved this and now you have made my year!!

Rouladen. My family's favorite. Instead of serving this with noodles, I love serving it with potato dumplings and red cabbage on the side. And I thought I knew how to make rouladen, and yet when I looked at the recipe, I see a whole new way to tackle mine next time. I liked how Morgan just rolled hers up and used toothpicks. I used to struggle to tuck in the ends so the filling wouldn't fall out. So difficult to do. Next time, I'm trying it her way!
