Everyone needs a little fresh fruit on their plates to break up all those carbs and meats. Plus, fruit is sweet and refreshing enough to top your dessert with too! Bring this fruit salad to a holiday or summer party and watch it disappear before your eyes!

- 1/4 cup orange juice
- 3 tablespoons honey
- 2 teaspoons vanilla
- 1 tablespoon lime juice
- 1 teaspoon lime zest
- 2 teaspoons chopped candied ginger
- 1 tablespoon chopped fresh mint
- 16 cups fresh fruit: cut up pineapple, apples, pears, banana, red grapes, strawberries, blackberries, blueberries, kiwi, mango, and pomegranate seeds.
In a small bowl whisk together the orange juice, honey, vanilla, lime juice and lime zest.
Wash and cut the fruit and place in a large glass bowl.
Pour the dressing over the fruit and toss well.
Add the chopped candied ginger and chopped mint and toss.
Add other fruits or substitute with fruits of your choice such as cantaloupe, peaches, watermelon, oranges, cherries, papaya, passion fruit, grapefruit.
