Peach Cobbler Cookies

- 1 cup Unsalted butter, room temperature
- 1/2 cup Granulated white sugar
- 1/2 cup Brown sugar
- 1 Egg
- 1/2 teaspoon Peach flavoring
- 2 1/2 cups All-purpose flour - scooped and leveled
- 1/2 teaspoon Salt
- 1/2 teaspoon Baking soda
- 1/2 teaspoon Baking powder - optional
- 1/2 teaspoon Cinnamon
- 1 cup Diced canned peaches, drained
- 1 cup Powdered sugar
- 1/4 cup Peach juice (1/4-1/2 cup) Instructions
To make your peach cobbler cookies, start by lining 2 baking sheets with parchment paper.
Add the butter, white sugar, and brown sugar to a mixing bowl or the bowl of a stand mixer.
Cream them together for about 5 minutes or until light and fluffy.
Add the egg and peach flavoring and beat them into the mixture.
Sift in the flour, salt, baking soda, baking powder, and cinnamon and stir them into the batter.
Add the diced peaches and fold them in with a rubber spatula.
Scoop evenly sized balls of the mixture onto the prepared baking sheets.
Place the baking sheets in the fridge to chill for about 30 minutes.
Bake the cookies in an oven preheated to 350 degrees for 15 minutes.
While the cookies bake, make the glaze by whisking together the powdered sugar, and peach juice.
Spoon the glaze over the baked cookies and enjoy warm or allow about 45 minutes for the glaze to set.
