Jumbo Pineapple Upside Down Cupcakes
If you like pineapple upside down cake, you'll love this easy cupcake recipe. Jumbo Pineapple Upside Down Cupcakes are just like the cake, but made in a jumbo muffin tin. What we love about this pineapple dessert is that it only requires 4 ingredients. You'll want to rush your way through the yellow cupcake just to get to the gooey sweet pineapple layer at the bottom. It's a good thing these cupcakes are jumbo, or else we bet you couldn't eat just one.

- 1 package yellow cake mix
- 1/3 cup butter or margarine, melted
- 2/3 cup brown sugar
- 1 (20-ounce) can crushed pineapple in juice
Preheat oven to 350 degrees F.
Mix cake mix according to package.
In jumbo muffin tins, place jumbo muffin cups.
Drip 1 tablespoon of melted margarine into each cup, 1 heaping tablespoon of brown sugar in each cup.
Add pineapple, then pour batter into cups until 3/4 full.
Bake for 20-25 minutes.
