I am so thrilled to find this recipe. I love chicken pot pie, and love the idea that these bake up into individual portions. I live alone and it makes it so convenient to freeze them to enjoy on another day. Of course that's assuming they freeze well. I think they should. Love the versatility of this recipe also. Can be made with leftover chicken or turkey, and I am also going to try it with ready made pie crust.

These get made all the time in my house, although I'm usually all for faster ways to get me out of the kitchen, so when I make these sometimes I use pre-cooked chicken, boneless pieces of course, and prepackaged gravy packets. They still come out awesome, though. So easy, quick to make, and they turn out sooooo yummy! And I love that this recipe came from Rachel Ray herself. I am such a fan, and this is just one reason why!
