Lazy Days Chicken Sheet Pan Dinner is the perfect chicken dinner recipe for when you come home and have lost the will to cook. This recipe could not be simpler and all the ingredients cook together on one pan so you only have one thing to think about. Gather a few vegetables, 4 chicken breasts, some herbs, salt and pepper and olive oil and you are set. Throw your chicken dinner in the oven and in about an hour, you'll have a delicious and hearty meal to present to your family. Busy days beware, this recipe will have you feeling cool as a cucumber and totally stress free.
- 4 boneless, skinless chicken breasts
- 8 small yukon gold potatoes, cut into quarters
- 1 small onion, cut into quarters
- 1 small bag of baby carrots
- olive oil
- salt and pepper
- dried herbs of your choice (in this case, rosemary and thyme)
Preheat oven to 350 degrees F.
Lightly spray a heavy baking sheet with cooking spray.
Place chicken on the sheet pan, leaving space between each one.
Scatter vegetables even across the pan.
Drizzle with olive oil. Season with salt and pepper and herbs.
Bake for 30-40 minutes, until chicken is cooked though and vegetables are tender and golden.
