Dump and Done Chicken Casserole

- 10 ounces cream of mushroom soup
- 1 cup sour cream
- 8 ounces cream cheese, room temperature
- 1 cup milk
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 1 ounce Ranch seasoning
- 15 ounces can whole kernel sweet corn, drained
- 2 cups grated cheddar, divided
- 3 cups cubed chicken
- 28 ounces hash browns, thawed
- 1 cup crushed butter crackers

Dump and Done Chicken Casserole
Chicken Casserole Recipe
Preheat oven to 350 degrees F.
In a large bowl combine soup, sour cream, milk, cream cheese, thyme, pepper and Ranch seasoning. Stir until smooth.
Mix in corn and 1 cup grated cheese.
Next, mix in hash browns and chicken.
Spread entire mixture into a lightly greased 9x13 pan.
Sprinkle remaining cup of cheese on top and finally the crushed crackers.
Bake for 30 minutes until mixture is hot and bubbly.

The very first time I had the pleasure of eating a chicken casserole was at my future Mother-in-laws house. Her recipe had water chestnuts in it and I thought that was the best thing that I have ever eaten. I had her recipe and lost it and here is a wonderful replacement.

You need to specify "cooked" chicken. Thirty minutes will not cook it in the casserole.

There sure are a lot of ingredients in this casserole but it sounds delicious. I have a brunch coming up and I think my card playing friends will like this recipe.

Hmmmmm...I'm not really sure if I'd make this for breakfast, but it sounds like a great idea for lunch or even dinner. Then again, I have been known to eat breakfast at any of the time of the day so who knows...maybe having it for breakfast wouldn't hurt after all. Cheddar is so good with chicken, adding hash browns will definitely make it more hearty...and what a great way to start the day!

Oh my goodness does this sound delicious! I am a huge fan of dump-it-together style casseroles. They just save you so much time and dishes. I'm thinking that I could even up the nutritional value of this casserole by mixing in some finely chopped or grated vegetables before cooking (I'm thinking shredded carrot or zucchini? Maybe some peppers?) This would be a quick fix weeknight meal. I'm wondering if it freezes well. Maybe you could portion out the leftovers to be used later on?

It should freeze just fine. I exchanged the corn for frozen peas for the color (and corn doesn't 'play' nicely with me).
