"If you asked me to name one dish from my childhood - only one - it would have to be this Hot Chicken Salad. It's an 80's dinnertime staple, complete with cream of canned soup and cornflakes on top. Hot Chicken Salad (which by the way, can we discuss the fact that there is nothing salad about this recipe), is the ultimate comfort food. Even my husband who is anti-casserole and definitely not a fan of creamy soups loves this one."

I looked this recipe up because I thought it was a salad! Imagine my surprise! But I'm glad I did as it looks delicious. I love the idea of the cornflakes on top and throwing it together with a can of soup is such a simple thing to do. I will definitely be making this.

Hot Chicken Salad, I love it. This recipe is a great way to make leftover cooked chicken, and no one will ever know. Rice a Roni, cream of chicken soup and crunchy corn flakes, all come together to form a delicious chicken and rice casserole, cleverly disguised as Hot Chicken Salad.
