- 1/2 cup chopped onion
- 1(10-ounce) can cream of chicken soup
- 1 (8-ounce) container sour cream
- 2 1/2 cups shredded Cheddar cheese, divided
- 1 teaspoon kosher salt
- 1/2 teaspoon pepper

Easy Hashbrown Casserole
Preheat oven to 350 degrees F.
Spray a 9 x13-inch baking dish with cooking spray.
In a large mixing bowl combine the hash browns, onion, chicken soup, sour cream, 2 cups cheese, salt, and pepper. Mix well to combine.
Spread into the baking dish. Top with ½ cup cheese.
Bake for 50-60 minutes until casserole is hot, browned, and the cheese is bubbling.

Every time I've ever had hash browns they were dripping or soaked in fat...which is probably why I avoid them. But I really love that these are baked and with cheese and onion, it just sounds so flavorful that I'm gonna have to give it a try. Baking potatoes with the skin on is probably the way I'd go.

Hashbrown casserole is always a crowd pleaser - the ultimate comfort food! This recipe is quite a bit simpler than others I've seen, but I guess that's why it's "Easy"! I've made it using Cream of Mushroom or Cream of Broccoli soup, but I bet the Cream of Chicken would be delicious too! This recipe is great for get-togethers, potlucks, even brunches! Very yummy!
