- 1 tablespoon olive oil
- 2 pounds ground beef
- 1 onion, diced
- kosher salt and fresh ground pepper, to taste
- 1 (28-ounce) can diced tomatoes, undrained
- 1 (6-ounce) can tomato paste
- 1 (32-ounce) can chicken broth (divided)
- 1/4 cup ketchup
- 1 pound rotini pasta
- 2 cups shredded Cheddar cheese
- 1 roma tomato, diced

Heat olive oil in a large stockpot or Dutch oven over medium-high heat. Add ground beef and onion and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks; season with salt and pepper, to taste. Drain excess fat.
Stir in tomatoes, tomato sauce, tomato paste, chicken broth (2 cups), ketchup, and pasta. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through about 13-16 minutes. Stir throughout adding in any more chicken broth as needed.
Remove from heat and top with cheese. Cover until cheese has melted, about 2 minutes, and then stir to mix throughout.

I made this but the recipe directions sayis to stir in tomato sauce. Tomato sauce is not listed in the ingredients. How much tomato sauce do you add. roma tomato is listed in the ingredients but it does not say when to add the tomato in the directions. Please help.

Amy, the ingredients list a large can of diced tomatoes, undrained. So the directions are basically telling you to add the tomatoes and the sauce they came in.

I've been making a meal similar to this for many years and had no idea what to call it...so I chose the name whatchamacallit. My preference of pasta is either elbow or shell macaroni, as it picks up all of that yummy sauce easily and I like to throw in some french cut green beans as well. I'm not sure why ketchup is necessary for this recipe if you're using tomato paste and considering it's already got ground beef...I think I'd rather use beef broth. This is an easy, time saving, delicious meal that everyone will love!

Does this recipe sound like one of those box meals you find in the hamburger helper aisle to anyone else? I have to admit on occasion when I am late on time, I have thrown one of those meals together. Now I no longer have lack of time for an excuse because this meal can easily double as one of those box meals.

A good, tasty and filling family meal and quite easy enough to make on a week night after a busy day. We added a couple of extra flavors, garlic and chili fresh from our vegetable garden, and it was tasty and more-ish. We also grated a little fresh parmesan into the cheese topping and crisped it under the broiler for a couple of minutes.
