- 3/4 box yellow cake mix
- 1/2 cup water
- 1 egg
- 2 cups milk
- 8 ounces cream cheese
- 1 package instant vanilla pudding
- 1 package frozen whipped topping (8 oz.)
- 1 1/2 cup fresh blueberries
- 1/4 cup coconut

Preheat oven to 350 degrees. Spray a 9 x 13 in. baking pan with non-stick cooking spray.
Mix ¾ of the cake mix with the water and egg until well blended.
Pour into the prepared pan and bake for 15 minutes; cool completely.
Meanwhile, beat the cream cheese until light and fluffy.
Gradually beat in the milk and mix until smooth. Stir in the instant vanilla pudding.
Spread the pudding mixture evenly on the cooled cake. Top the pudding layer with the whipped topping.
Sprinkle the coconut over the whipped cream layer. Top with blueberries.
Chill for at least 2 hours before serving.

It seems like 15 minutes isn't enough time to bake the cake and why do you use only 3/4 of the cake mix instead of all of it?

When we baked this recipe in our test kitchen, 15 minutes was enough time for the cake to cook through, however, we know not all ovens are the same, so you might allow for 5-10 minutes more. Just make sure to take it out and check it before leaving it in too long. As far as the cake mix measurement, 3/4 is proportionate to the wet ingredients, however, if you don't want to have 1/4 cake mix lying around, you can use the whole box. It shouldn't make a huge difference in the end.

Hmmmm...this is interesting although I assumed it would have fruit baked into the cake kinda like a fruit cake which I wouldn't mind one bit. It seems to be a light dessert perfect for summertime, but I'm thinking maybe doing it in layers to incorporate more fruit. I bet using a lemon pudding would really compliment the blueberries too...yum!

This cake is easy to make and a wonderful dessert. It is such a pretty dessert and makes good use of summer fruit. I will make it with blueberries, and make it again with strawberries. A cake with pudding and cool whip in it is like three desserts in one. Can't wait to serve this to my family next week!
