I love carrot cake but I've never made one. I'm not a fan of having to make icing because I feel like it always leaves me with a huge mess in my kitchen afterwards! The idea of everything baked into the cake is really exciting as is the addition of pineapple. I can't wait to try this one!

I didn't know there was anything other than plain gooey butter cake (not that it's plain-it's AWESOME! I have never made carrot cake, but I love it, and the thought of making it into a gooey cake is wonderful. I believe I have found my Easter cake.

This recipe is such an awesome idea! It is so unique and very delicious! I typically make the classic carrot cake with cream cheese icing for my family but this recipe will be taking over! Especially interesting is the addition of the crushed pineapple. I recommend trying a gooey red velvet cake with the cream cheese topping as an alternative!
