I know that the recipe says "serves 4," but it should probably say "serves me." I think I could eat these all in one sitting! Gosh, I love zuccini so much. This dish reminds me a lot of the parmesan zuccini fries at Carrabba's - but I'm sure not nearly as expensive.

I love these Zucchini Parmesan Crisps. The ingredients are simple, the prep is simple, and in no time at all you have a great snack, appetizer, or believe it or not, I have served these as a side dish with hamburgers or hot dogs for dinner. Whip up a batch of these and decide how you want to serve them. You can't go wrong.

These look so delicious, light, and crispy. I think the Panko crumbs really make foods that are going to be fried shine. This is the first year we aren't planting a garden so I'll be sad not to have the usual plethora of zucchini around. I'll have to buy some at the local farm stand because these look too good to pass up. Does anyone add any extra herbs or seasoning to the mix on this recipe?

This is a very yummy snack idea! Panko and parmesan are a great combination. I always put a mix of panko and parmesan on the top of my baked macaroni. Its reallyyy good. I can imagine that these zucchinis will be yummy too, coated in panko and parmesan mix. But Im gonna try to bake them instead of fry them.

My mom uses zucchini in a ton of dishes including chocolate cake. I think these look so yummy. I want to go out and get a zucchini now. Great idea for a veggie snack to add to the summer menu and use up the veggie when you have a ton of them in the garden.

I am not usually much of a fan of deep frying but this recipe sounded so good that we decided to give it a try for the drinks party we had for family and friends last weekend. The crisps disappeared in a flash and people were asking for more so that was a great sign! Definitely will make them again.

This recipe looks great and what a perfect way to use u that extra zucchini from the garden in summertime! The crunch from the panko bread crumbs and flavour from the parmesan cheese sounds so yummy! I wonder if these could be oven baked instead of pan fried to make them a bit healthier? I'm guessing they wouldn't be as crunchy buy the taste would probably be just as good. Has anyone tried this?

Zucchini is one of my favorites. Is panko really special or will plain breadcrumbs work the same way? I never have understood the difference. I have seen recipes for these before, but they have all been baked. Does it matter the size zucchini used? I pick mine when they are small so should I still use two or do I need three?

I have zucchini growing in my garden so am delighted to find this recipe for a simple and tasty snack! I love to be able to serve interesting and different snacks to friends and family and non carb options are always very popular. These Zucchini Parmesan Crisps sound so good that I might just have to first make a batch for myself for quality control purposes, of course ))

These crisps look delicious. I also think that you could do the same thing with thinly sliced eggplant, sliced into rounds. I think that should be delicious too! I have to eat gluten free but I found Ian's Panko gluten free breadcrumbs and instead of dredging in flour, I will dredge in chickpea flour. Voila I can eat this too then!

Im not a huge fan of zucchini, but this looks really interesting and delicious. I love how quick and easy the recipe is this looks like something you could whip up as a last-minute dish to a pot luck. The only thing that might hold me back from attempting this recipe is the fact that its fried (my familys not very keen on frying food). I might look into adaptations (perhaps baking instead of frying, which will also mean the ingredients will have to be altered slightly).

My family really loves fried zucchini so this would take our favorite side dish to the next level! Normally, we just coat the zucchini in egg and panko bread crumbs. Then, we either bake the vegetables or cook them in a little bit of oil on top of the stove. So delicious!

This is making my mouth water! Zucchini is so yummy and perfect for an appetizer for an Italian meal. Zucchini is also very easy to grow in the garden! When you bake them they are very healthy. I would suggest marinara sauce or ranch dressing for dipping. Do you use the real grated parmesan for this or the parmesan topping found in the pasta aisle?

Yummy. This sound great. I love zucchini. I usually make mine by dipping them into water and then in equal amounts of cornmeal and flour with pepper. I then fry them in a little bit of oil in a skillet. This recipe sounds like it has more flavor. You could serve it with spaghetti and meatballs or as a snack.

If you don't have Panko or any type of bread crumbs, you can make soft bread crumbs oy processing the heels or a slice or two of bread in your processor or blender. As an alternative, any type of cracker, saltine, buttery, snack, even gluten free can be finely crushed to sub-in. If you don't use crumbs all parm will give you a crust that works but may brown quicker. Hope this helps it really is delicious.

You show this wonderful recipe for Zucchini Parmesan Crisps...I want to make them right now....But the only instructions are to fry on top of stove for 15 mns or back in the oven for same time. How does the Parmesan Cheese stay on the Zucchini....do you dip the Zucchini in an egg wash the sprinkle with the cheese....do you fry them and when you take them out sprinkle with the cheese? Thanks for your help with this!
